Ingredients

225g flour
2 eggs
salt

Sieve the flour with a good pinch of salt onto a pastry board. Make a well in the centre and break in the eggs with a fork. Work the flour from the outside of the mound into the middle and over the eggs. Work this well to a smooth dough then knead untill it is smooth and firm to the touch. After 10 minutes keading the dough should be elastic and shiny. Dip a cloth in warm water, wring it out untill almost dry and wrap the ball of dough in it. Leave for 30 minutes to rest. To use the dough, break it into two peices, roll out into two very thin sheets, using as little presure as possible and sprinle lightly with flour to prevent sticking. To make tagliatelle (thin strips of pasta, almost like flat spagetti), roll the sheet of dough as you might a swiss roll and cut into narrow strips. Unroll and cook, remembering that it will take less time than dried pasta.
