Council of Elrond - Sam's Recipe Box

Difficulty: Easy

Ingredients

2 cups flour
2 cups sugar
1 tablespoon cinnamon
1 tablespoon baking powder
1 cup (two sticks) butter or oil
3 eggs
2 cups firmly packed grated zucchini

Instructions

Preheat oven to 350 degrees F.

Mix dry ingredients together. Add eggs, butter OR oil, and zucchini; mix well.

Pour into lightly floured and greased 9 x 13 inch baking pan. Bake 45 minutes, or until cake tester comes out clean.

Cool before slicing. Don't forget to serve Lord Elrond first!
