Ingredients

100 g plain flour
150 g powdered milk
1 tbsp baking powder
1 tbsp ghee or butter, melted
100 ml milk
500 g castor sugar
3 green cardamom pods, crushed
Large pinch saffron strands (imitation saffron yellow can be substituted at a pinch)
Vegetable oil for frying


Instructions

Mix together flour, powdered milk, ghee and milk to make a soft dough. Divide into 24 equal-sized balls.

Prepare sugar syrup by mixing castor sugar with 200ml water in a pan. Heat gently 5-7 minutes until sugar has dissolved. Add cardamom pods and saffron; simmer another 15-20 minutes.

Heat 5 cm oil in a shallow frying pan. Fry milk balls, a few at a time, 4-5 minutes, gently turning to brown evenly all over.

Remove from the pan and immerse at least an hour in syrup prior to serving.

Serve hot or cold.
