Serves:
Prep Time: 20 min.
Difficulty: Easy
Ingredients
2 ½ cups flour2 tsp baking powder
¼ tsp salt
150 grams butter
½ cup sugar
2 tsp cinnamon
1 tsp mixed spice
1 tsp vanilla essence
2 tbsp honey
2 eggs, beaten slightly
½ cup skim milk
½ tsp finely grated orange peel
Instructions
Preheat oven to 200 C/400 F. In a medium-sized bowl combine flour, baking powder and salt. Cut butter into small cubes and then work into flour mixture. Use a pastry cutter or just your hands. Work until the mixture looks like very fine breadcrumbs. Stir in sugar, cinnamon and mixed spice. In another bowl combine vanilla, honey, eggs, milk and orange peel. Combine with flour mixture and stir until well combined. The dough should be soft but not too sticky. You may need to knead in slightly more flour. On a floured surface pat dough out to 2 cm (3/4 in.) thick. Cut into small shapes. Bake for 7-9 min. or until pale golden brown. Should be eaten within 3 days. Enjoy!
