Ingredients
2 large eggs1 cup granulated sugar
1 tsp. vanilla
1 cup all-purpose flour
1 tsp. baking powder
1 tsp. salt
1/2 cup milk
1 tbsp. margarine
Topping:
3 tbsp. margarine
1/2 cup brown sugar
2 tbsp. cream or milk
Instructions
Preheat oven to 350 F(175 C).Break eggs into bowl and beat until frothy. Slowly beat in granulated sugar and vanilla.
In separate bowl mix flour, baking powder, and salt. Stir in egg mixture.
Over medium heat, heat milk and margarine in saucepan until margarine melts. Add to other mixture.
Pour into greased cake pan and bake 25-30 mins.
Topping:
Mix topping ingredients together in a saucepan. Stir over low flame until margarine melts. Spread over warm cake and allow to set before serving.

Mmmm. very good. Nice to make too. It DOES taste like pineapple upsidedown cake, but with out the pineapple. Try it will slivered almonds in the topping and almond flavoring in the batter.
I love this recipe! It tastes exactly like I pictured Lembas, but it looks more like cake than the small squares. Still, it is wonderful!
I really liked this recipe; I made it for Tolkien’s birthday. It would have been nice however if the size of cake pan had been included. The pan I used caused it to turn out like lembas brownies rather than lembas cake. I would recommend a 2x8x8″ cake pan.
