Ingredients
100 g butter125 g wild honey
1/2 tsp salt
1 tbsp cinnamon
100 g self-raising flour
100 g flour
1 tbsp milk
100 g sliced almonds
1 vanilla pod
2 tbsp shredded orange peel (zest)
2 tsp orange blossom water (optional)
Instructions
Put the shredded orange peel and sliced almond in a blender and grind them finely.Put the milk with the vanilla pod in a saucepan on the stove over low heat for 15 minutes. Remove vanilla pod and cut open; take out the pith from the pod and mingle it with the milk and orange blossom water, and let cool.
Mix the flours, wild honey, butter, salt, cinnamon and the cooled-down milk mixture to a solid dough. Knead the sliced almond through the dough.
Let rest for at least an hour; meanwhile, heat oven to 160° C .
Roll out dough and cut large disques about the size of a CD. Place on greased baking tins (sheets) and bake 25 – 30 minutes until golden brown.
To ensure crispness, cool for at least 10 minutes before serving.

I did a slight variation of this lembas recipe and a few bites really was enough to fill me up. Granted, I’m not a big eater, but I thought that this recipe makes really great elvish way-bread. It’s also very flavorful.

I changed the recipe a little, I used more milk, I couldn’t see the bottom of the saucepan anymore, I didn’t use that last ingredient (couldn’t find it anywhere, inthe Netherlands we haven’t such brilliant great superstores as in England) and I baked it 20-25 mins

I got to make this early this morning and its so good! But in my opinion i needed more of an orange flavor, but i really really love it and its filling too =)
