Ingredients

6 eggs
Juice from 1 1/2 large lemons
Grated rind of one lemon
9-inch baked pie shell
1 cup sugar
1/2 envelope plain gelatin softened in cold water
3/4 cup cream (unsweetened) whipped for topping

Instructions

1) Separate eggs, put white in refrigerator. Add sugar to yolks - beat well. Stir in juice and add gelatin.
2) Place in double boiler over simmering water (don't let it boil). Stir constantly until very thick. Set aside to cool.
3) Beat whites until stiff. Fold into cooled lemon mixture. Pour into shell. Brown under broiler (do not use oven to brown).
4) Chill and before serving top with unsweetened cream and sprinkle grated lemon rind over all.
