Description: I think, if Tolkein were inspired by anything in his creation of Lembas, then these cookies may very well have helped. This rendition of the recipe is so simple, it's almost impossible to resist baking a batch, and, if I even need to mention it, they're absolutely delicious.

Serves: around 4-5 Dozen

Ingredients
1 package lemon cake mix1 egg
2 cups (4 oz.) Cool Whip
Powdered sugar
Instructions
Preheat oven to 350 degrees.Mix together well: cake mix, Cool Whip, and egg.
Make 1" balls (about a teaspoonful) and roll in powdered sugar.
Bake 10-15 minutes on greased cookie sheet. Do not overcook.
