Ingredients

3 lbs rabbit meat (substitute with chicken thighs if desired)
2 cups of fine cubed carrots, parsnip, celery stems, leek,onion
1 bayleaf
2 minced garlic gloves
1 cup of vegetable broth
1 cup of sliced mushrooms
salt, pepper
1 cup sourcream
butter or ghee


Instructions

Season the rabbit meat with salt and pepper and brown it in a big skillet in butter/ghee.
Remove the rabbit and roast the mushrooms and the vegetables in the skillet, add the bay leaf and the garlic. Stir well.
Add the rabbit again and stir again.
Now pour the broth over it and let it simmer for 5 minutes or until thickened. Add more water and lower heat. When the water has disappeared add more water. Continue this procedure 6 to 8 times to get a good gravy.
After an hour take the meat out and stir the sour cream into the gravy, add the meat again and serve with homemade pasta and lingenberries.
