Ingredients

1 tbsp golden syrup
2 tbsp (clear) honey
1oz butter
6oz semolina
1 pinch salt
1/4 tsp nutmeg
1 egg (medium-large)
3/4 tsp baking powder
About 3 tbsp milk
3 tbsp ground almonds
Lemon rind - 1/2 lemon

Instructions

Preheat oven to 180C (350 / gas mark 4). Line an 8inch (20cm) baking tin with grease-proof paper.

In a pan heat together butter, syrup and honey until butter is melted.

Mix together semolina, baking powder, salt, almonds, nutmeg, egg, lemon rind and half the milk. Mix this into the syrup, honey and butter mixture. Add the rest of the milk if the mixture is to stiff.

Put into the tin and spread out until about 1/2 - 3/4 inch thck. Cook for 20-30 mins or until lightly brown.
