Description: A wonderful stew of orange root vegetables. Rosie feeds it to Eleanor who loves the yummy carrot sweetness.

Serves: 8 Elves or 4 hungry Hobbits

Ingredients
6 large carrots, well scrubbed3/4 cup orange uice
3/4 cup carrot juice
1 heaping tsp. cornstarch or potato starch
Sugar and salt
Instructions
Slice UNPEELED carrots into big oval chunky pieces. Put into large pan, pouring the juices, salt and sugar over the carrots.Bring to a boil. Turn heat down, boil for 15-20 mi
nutes.Drain, but DO NOT throw juices away! Keep carrots warm.
Pour juices back into pan and return to boil. Mix starch with 2 tbsp. carrot juice. When juices boil add mixture, stirring constantly till thick gravy consistency. Return carrots to sauce. Heat through. Do not boil.
Serve with Mushrooms and Potato Dumplings.
