Ingredients

1 3/4 cups all-purpose flour
1/4 teaspoon baking soda
1/2 teaspoon salt
1/2 cup sugar
3 tablespoons poppy seeds

1 (8-ounce) carton sour cream

1 large egg, lightly beaten

1/4 cup butter, melted

2 teaspoons vanilla extract

Instructions

Oven: 400 degrees F.

Combine first 5 ingredients in a bowl; make a well in center of mixture.

Combine sour cream and remaining 3 ingredients. Add to dry ingredients, stirring just until moistened.

Spoon batter into greased muffin pans, filling two-thirds full. Bake 18 to 20 minutes or until lightly browned. Remove from pans immediately.
