Ingredients

1/2 lb. very finely chopped mushrooms
1 tbsp. chopped onion
6 tbsp. butter
2 cups finely chopped carrots
2 cups finely chopped celery
1 clove minced garlic
2-1/2 cups beef broth
3-1/2 cups water
1 small can of tomato paste
1 pinch salt and pepper
1/4 cup dry sherry (optional)

Instructions

In a large saucepan, melt 4 tbsp. of butter. Add onions, carrots, celery and garlic. Stir in beef broth, water, tomato paste, salt and pepper. Bring to a boil.

Cover and reduce heat. Simmer 1 hour.

In a blender, puree the soup; return mixture to soup pot.

Melt 2 tbsp. butter in a skillet. Add the sliced mushrooms and saute for 5 minutes. Add to the soup, along with sherry if desired. Heat thoroughly and serve.
