Ingredients
2 cups brown sugar1 cup corn oil
4 eggs, beaten
1 lb canned pumpkin
3 cups flour
2 tsp baking soda
2 tsp salt
1 tsp baking powder
3 tsp pumpkin pie spice ( if you don't have pumpkin spice use 1 tsp nutmeg, 1 tsp all spice, and 1 tsp cinnamon and increase the cloves to 1/2 tsp.)
1 tsp ground cloves
2/3 cup water
Instructions
Mix together sugar, oil, eggs, and pumpkin (I use a food processor).Mix together dry ingredients and add, a little at a time, alternating with water, to the pumpkin mixture.
Beat after each addition
Place muffin papers in muffin tins, and fill 2/3 full. Bake at 350 degrees for 25- 30 minutes.
