Description: Seasoned, barbecued lambchops. Great for the more formal dinner (without trolls.)

Ingredients

2.5 kg. leg of lamb, without fat
3 cloves garlic
1 teaspoon salt
2 tablespoons chopped mixed fresh herbs or 2 teaspoons dried herbs (thyme, sage, rosemary, oregano)

1 tablespoon fresh chopped parsley
1 tablespoon olive oil


Instructions

Preheat oven to 225 C.

Cut about 12 incisions in the meat using a pointed knife, at regular intervals.

Make a paste of the salt and garlic in a mortar or blender. Stir in the herbs and parsley. Rub the mixture into the scored meat, with a teaspoon or (in my case) your fingers. Rub on the olive oil and leave to marinate in a cool place for an hour, then place in oven.

Roast 15 min., then lower temperature to 200 C. Continue roasting for another 50-60 minutes, frequently basting with gravy.

Let rest for 20 min. in a warm place before slicing.
