Ingredients

Fresh garden lettuce,and/ or other greens (spinach, very early dandelion greens, etc.)
Finely chopped resh herbs-basil, parsley, thyme, oregano, etc. to taste
2-3 cucumbers
Green onions, chopped
Black olives, pitted
Extra-virgin olive oil
1 lemon
Salt

Instructions

Wash lettuces and/or greens in basin until grit is gone. Dry on paper towels and place in salad bowl.

Wash cucumbers well. Remove wax if store-bought, or peel if you prefer. Slice and add to greens, along with green onions and olives.

Cut lemon in half and remove seeds. Squeeze juice over salad.

Drizzle olive oil over, sprinkle salt, and toss. Serve very cold with some nice, freshly-baked bread.
