Ingredients

1 lb. penne pasta (or any pasta of your choice)
1 tsp salt
1 tbsp olive oil
1 tbs minced garlic
1 head garlic (6 cloves)
3 minced tomatoes
1/2 cup white wine
1 1/2 cup heavy whipping cream
1/2 cup grated parmesan
1/2 tsp basil


Instructions

1. Pre-heat oven to 250 degrees Fahrenhiet. Slice the top off the head of garlic and place in an oven pan. Drizzle lots of olive oil over the garlic cloves. Roast in the oven for 45 minutes.

2. Cook the penne or pasta of your choice according to directions on box, or your own preference. However, leave some of the pasta al dente (not quite done). Drain. Rinse with olive oil to prevent sticking. Put aside and cover to contain heat.

Sauce:

1. Once the garlic is done, use a garlic press to squeeze into a sauce pan. Sautee lightly.

2. Add white wine and reduce. Add cream, tomato, and basil and continue to reduce sauce.

3. Slowly add the grated parmesan and blend until sauce has a smooth texture. When complete, set aside and pour into tureen or bowl.

Serving Suggestions: Serve with a hearty baguette or potato bread. Adding cooked salmon (separated into small pieces) to the sauce adds to thickness and to preferred taste.
