Ingredients
(In English Metric or Imperial measurements)75g (3oz) butter or margarine
225g (8oz) self-raising flour
pinch of salt
75g (30z) sugar
2 eggs, lightly beaten
raspberry jam
Instructions
Grease a baking sheet. Rub the fat into the flour and salt until the mixture resembles fine breadcrumbs; stir in the sugar. Make a well in the centre, add the eggs and mix well to form a stiff dough. Turn out on to a floured board and form into a roll. Cut into 10 pieces, shape them into balls and place well apart on the baking sheet. Make a hole in the centre of each and fill with jam (remember, appearances can be deceptive - it may look like you have put in a lot of jam, but the buns rise in the oven and a lot of jam can become a little jam because the buns have risen so much). Close up the opening, sprinkle with a little sugar and bake in the oven at 200C (400F/Gas Mark 6) for about 15 minutes until golden brown. Cool the buns on a wire and eat really fresh.

Mmmmmm… Eating one now… Absolutely Delish! Also works well with fresh rasberries -and- jam inside – ran out of jam, so I mixed in the real fruit with the jam and filled the buns with it.

I added a pinch or spearmint and cinnamon to the dough and it really brought out the raspberry.
