Ingredients

4 oz.self-rising flour (or plain flour with 2 teaspoons of baking powder per cup of flour)
2 oz. butter
2 oz. sugar
1 egg
1/2 tsp. vanilla extract
3 tbsp. milk



Instructions

Cream butter and sugar. Beat in egg and vanilla. Sift flour. Stir in flour and milk alternatly into butter mixture.

Turn into a pudding basin and cover with greased paper.

Steam in a large saucepan of water for 1 1/4 hours.

Hints

Make sure the basin floats a little bit, but not too much or the pudding will either burn or be uneven.

Variations

CHOCOLATE

(This is my fav! Great with hot custard)
Add 2 tbsp. cocoa to the flour and an extra 2 tbsp. milk.

WATERFALL PUDDING

Place 2 tbsp. jam, marmalade, or golden syrup in the bottom of the basin before placing in pudding mixture.
