Ingredients

Leftover mashed potatoes (or just one or two regular potatoes, cooked until soft)
2-4 c. milk
1/2-1 c. Shredded Cheddar cheese for topping
Salt and pepper

Instructions

Place potatoes in soup pot and add 2-4 cups milk (depending on how thick you want your soup, and how many potatoes you have). Turn heat to medium high. Cook to boiling point, stirring occasionally to keep potatoes from scorching.

Add about a half a cup of shredded cheese, or more to taste. Season with salt and pepper.

When cheese melts, cover, remove from heat, and let set for about five minutes.

Stir soup to desired consistency. Allow to set a little longer if you prefer a thicker soup, or return to heat to simmer for a thinner broth.
