Ingredients


Filling:
275g tomatoes
250g feta cheese
1 clove garlic
2 tablespoons parsley, chopped
2 tablespoons breadcrumbs

Crust:
250g puff pastry
1 egg, beaten, for glaze

Instructions

Preheated oven to 220 degrees C.

Blanch tomatoes in boiling water for 30 seconds. Rinse in cold water and skin. Dice tomatoes, removing core and seeds. Mix in cheese, garlic, parsley and breadcrumbs.

Roll pastry into a square just larger than 25 x 25 cm. Cut out four 13cm squares.

Divide filling between pastry squares and dampen edges. Fold pieces of pastry in half diagonally and press edges with a fork to seal in filling. Glaze with beaten egg.

Bake 20 minutes untill puffed and golden.
