Ingredients

1 tsp butter (no substitutes)
½ sliced onion
¼ cup chopped green pepper
¾ cup chopped yam

3 eggs
¼ cup milk
½ tsp garlic powder
1/8 tsp cayenne pepper
1/8 tsp black pepper
1 cup grated cheddar cheese

Chopped fresh asparagus

Instructions


Melt butter in large sauce pan, sauté onion, green pepper, and yam on low heat for 10 minutes or until just soft, stir often.

In a small bowl beat eggs until frothy add milk, spices, and grated cheese. Add sautéed veggies to egg mixture, stir until veggies are covered in egg mixture.
Pour back into sauce pan and cook on med heat until the omelet is almost set but top is still runny.

Add asparagus on top of the omelet and cook for another 5 minutes with a lid on the pan to steam the asparagus.
