Ingredients

2 cups self-rising cornmeal
4 tablespoons flour
1/2 cup margarine
1 1/4 cups buttermilk
2 eggs
1/4 teaspoon baking soda

Instructions

Heat oven to 450 degrees. Grease skillet, pan, or mold pan (muffins, sticks, etc.) and place in oven to heat. Measure meal into mixing bowl. Add margarine, eggs, milk and dry ingredients and blend thoroughly. Pour the batter into hot, greased pan (for muffins and sticks, fill pans 2/3 full). Bake 15 to 20 minutes, or until golden brown.
