Ingredients
2 cups cooked brown rice1 cup quartered cherry tomatoes
1/3 cup chopped red onion
1 can (2 1/4 oz.) sliced ripe olives
3 Tbs. cider vinegar
2 Tbs. vegetable oil
2 Tbs. minced fresh parsley
1/2 tsp. salt
Instructions
In large bowl, combine rice, tomatoes, onion, olives. In small bowl, combine vinegar, oil, parsley, sugar, salt; mix well. Pour over rice mixture and toss to coat. Cover and chill at least 2 hours.
