Description: A darker, more nourishing variation of the traditional Lembas bread.

Ingredients

1 stick unsalted sweet cream butter
1 ½ cup Brown sugar, packed
1 egg
1 tsp Vanilla
1 T Almond extract
1 T honey
1 ½ cup unbleached white flour
1 T cardamom
2 T flax meal
1 cup ground pecans (measured after ground)


Instructions

Before you start, grind a cups worth of pecans. For this I used a mortar and pestle, but a nut grinder can also be used although it will not grind the nuts as finely.
Melt butter. Add sugar, and egg, and mix till smooth and creamy. Add vanilla, almond extract, and honey. (I prefer mixed flower honey which is darker and has a stronger flavor, but store bought clover honey will work as well) Stir till blended. Cover and put in a cool, dark area.
In another bowl combine dry ingredients; slowly stir dry ingredients into the butter/sugar mixture. Add nuts, and stir until stiff.
Spread dough on a greased cookie sheet and flatten with your hands. Sprinkle the top lightly with vanilla sugar and bake at 350 F., or 176 C. for 10-12 minutes.
Remove from the oven and cut immediately. Let cool before use.
