Ingredients

BARS:
3 c. flour
4 tsp. baking powder
1 tsp. salt
1 3/4 c. sugar
3 c. butter or margarine (not diet), softened
3 eggs
1 c. milk
1 tsp. vanilla extract
1 carrot, grated
3/4 c. golden raisins
3/4 c. chopped walnuts

FROSTING:
Confectioners' (powdered) sugar
Water
1 tbsp. lemon juice or 1 tsp. lemon extract
1 tsp. lemon zest (finely grated peel)


Instructions

Preheat oven to 350 degrees F.

Grease and flour rectangular or square baking pan.

Sift flour, baking powder, salt, and sugar into large bowl.

Add butter or margarine, eggs, milk, and vanilla. Beat thoroughly by hand or with electric mixer.

Pour into prepared baking pan and bake for 35-45 minutes, or until cake tester comes out clean. Let cool and then dust with powdered sugar.

To make frosting, add a small amount of water at a time to powdered sugar and mix with a fork until it becomes almost frosting consistency. Add lemon juice or extract and a little more powdered sugar if necessary. Mix in lemon zest.

Spoon frosting and spread on top of cooled cake. Let sit for about a half hour, then cut into bars.
