Description: Make your own soft cheese.

Ingredients
1 litre whole milk (goat or cow)Either 28 ml wine vinegar or 250 ml good beer
Strainer, cloth and string
Possible flavourings: wild herbs (chives, marjoram, thyme, mint), or any wild berry such as blackberries, bilberries, raspberries or wild strawberries.
Instructions
Put the milk into a pan and slowly bring to boil. When the milk is starting to rise turn off the heat and add the vinegar or beer and stir. Keep stirring until the curds and whey separate.Place the cloth in a bowl and pour the curds and whey in, pull up the corners of the cloth to drain. Squeeze gently to strain and then tie with string and let hang over the bowl and drip for at least one hour.
Empty contents into another bowl and add a little salt to taste and flavourings if desired.

I forgot to mention that you need to use *nonreactive* pots and utensils (ie. NOT metal)
