Description: Nourishing and satisfying, this dish is served to those recovering their strength in the Houses of Healing. There is even a special henhouse out in the back to supply the eggs.

Ingredients
2 tbsp. butter or margarine2 tbsp. flour
1/2 tsp. salt
Dash fresh ground black pepper
1 tsp. prepared mustard
1 c. milk
1 c. grated Cheddar cheese
6 eggs
Instructions
Preheat oven to 350 degrees F.Melt butter or margarine over low heat. Stir in next 4 ingredients, mixing well. Continue stirring and cook until smooth and thickened.
Add and stir cheese until melted.
Cover bottom of a greased baking pan with 1/2 of the cheese sauce. Carefully break eggs onto cheese sauce, one at a time and side by side. Cover with rest of sauce.
Bake 20-25 minutes, or until eggs are done to taste. Serve from the dish or on buttered bread triangles.
