Ingredients

25g butter
375g trimmed leeks, sliced
750g potatoes, diced
Salt and pepper
900ml vegetable stock

Instructions

Melt butter in large saucepan over low heat. Add leeks and potatoes. Cover pan, increase heat and fry gently 10 minutes, stirring often. The vegetables can brown slightly, but don't let them get too overdone.

Add vegetable stock and stir. Simmer 10 minutes. Season to taste and serve.
