Description: Quick and easy fiery stir-fry

Ingredients
150g/5oz tofu, marinated (see below for marinade)175g/60z broccoli, separated into florets and sliced into sticks or rings
1tbsp groundnut oil
5tbsps water
125g/4½oz mushrooms, sliced. Shiitake mushrooms go well with this recipe
1 clove garlic, finely sliced
2-cm/1-inch piece of ginger, grated and squeezed. Reserve liquid
1 small red chilli, finely chopped, or dash or two of Tabasco
1tbsp tamari or soy sauce
Instructions
Tofu Marinade1tbsp tamari or soy sauce
60ml/2fl oz water
Dash or two of Tabasco

Stir-fry
Cut tofu into 2cm cubes or slices and place in prepared marinade for at least half-an-hour. Pour oil into wok and heat until smoking Quickly add broccoli, shaking wok back and forth for 2 minutes
Add splash or two of water until broccoli is part-fried, part steamed and tender.
Add mushrooms and garlic and continue stir-frying for 2 minutes, adding splashes of water if pan dries out too quickly. Add ginger juice.
Add tofu, (with a little more oil if necessary) and fry to a burning gold on both sides, moving pan back and forth over flame.
Remove from heat, add Tabasco or chilli as well as tamari, tossing and turning mix as you do so. Serve immediately on a bed of noodles or rice.
