Ingredients
125g soft butter150g soft brown sugar
1 large egg
150g plain flour
1/2 tsp. bicarbonate of soda
150g oats (I used cheap porridge oats)
100g raisins/friut of your choice
Instructions
Preheat oven to 190 degrees C, 375 degrees F, gas mark 5.Grease 2 baking trays with butter and line with parchment paper if desired.
In large mixing bowl, beat soft butter and sugar until fluffy, creamy and pale.
Add egg to fluffy mixture and keep beating until mixture almost doubles in size.
Sift in flour and bicarb soda; add oats and raisins. Mix well.
Dust hands with flour and, using half- tablespoon sized lumps, make round biscuit shapes.
Put half the shapes onto each baking tray; place on bottom shelf of oven. Set timer for 12 minutes.
After 12 minutes check for doneness. If three times their original size, darker and crisp on the outside and a bit softer in the middle, they are done.
Wait a minute and, using a spatula, move carefully onto cooling rack.
Store in airtight container.
