Ingredients

125g hazelnuts
100g butter
1 bunch sorrel
1 bunch chives and wild marjoram
1kg chopped leeks
1 kg peas
1 sprig mint
750g bulgar wheat
2 tsp salt

Instructions

Chop the nuts and fry in the butter for 5 minutes.
Add the chopped leeks and herbs except the mint and cook until soft.
Add the peas, mint and salt and cover with water.
Simmer 30 minutes.
Add bulgur wheat and cook until all the stock is absorbed. Serve at once
