Actually there are some men and dwarves of extreme height who gain immortality as a result of this particular abnormality: ergo .... elves are immortal because they are sooo tall.

Why did Tom Bombadil sing all day long (much to the annoyance of Goldberry)?

The Dwarves did. That's why Thorin was so mad that the Elves didn't help them fight Smaug the first time. He expected Thranduil to return the favor

Because Hobbits are mostly immune to the power of the Ring, and Frodo...sadly... somehow did not have that immunity
